Super Easy Fish Curry

I know curry tastes SO much better when you bother to make your own curry paste. But sometimes you just want to whip up a quick mid-week meal with as little prep as possible which is why this dish uses a ready made curry paste. The recipe is slightly vague about the quantity of veggies so that you can use up whatever you’ve got to hand or needs using up in the fridge - it’s a very forgiving recipe and is one of those recipes I fall back on when I’m not sure what to cook…and quick!
